A new grape variety developed through research carried out by the University of Bologna Department of Agrarian Sciences, Merlese combines the finest characteristics of Sangiovese with those of Merlot. The 5-year-old vines are planted in medium-textured, limestone-clay soils and yield 8 tons per hectare. After a meticulous quality-selection of the berries, the must ferments in temperature-controlled vats of fibreglassed concrete and of cocciopesto, with programmed pumpovers for optimal extraction from the skins. Merlese matures exclusively in steel.
