The CDP TRADITION RED is usually a blend of Black Grenache 90% & Syrah 10%. The average age of the wines is 45 years old. The soil consists in Silica and clay with rounded pebbles. Grapes come from 3 different location : Pierredon, Les Relagnes and Saint Paul. The picking is entirely manual and followed by systematic sorting in the vineyard. Then a traditional vinification with complete destemming. One part of the harvest is wine made in one wooden truncated vat. The grapes varieties are wine made separately with a long vatting 4 to 5 weeks. The temperatures are controlled throughout the alcoholic fermentation. Pumping over 1 or 2 times per day along and 3 to 5 releases during the fermentation. Then the maturing takes place during 12 months in “demi-muids” oak barrels for Syrah to coat the tannins. The most concentrated and tannic Grenache are aged in “demi-muids” from 12 to 18 months, the remaining stays in stainless steel tanks to keep fruit aromas and elegance. Definitive blend is determined and made just before bottling. 10.000 bottles are produced.
