THE CDP INSOLITE is 100 % Syrah. The average age of the vines is 50 years old. Located in the south of the appellation (Pied-Redon and Boucoup aeras), on silica-clayish soil with rounded pebbles. The picking, entirely manual, is followed by systematic sorting. Traditional vinification with complete destemming. The vinification is made in a thermos-regulated stainless-steel tank (max 30°C). During the alcoholic fermentation 3 releases and then pumping over 1 or 2 times per day. A long 26-day vatting. Then, the malolactic fermentation is made in stainless steel tanks and then the wine is put in demi-muids for 12 months. The bottling is made at the estate. 2500 bottles are produced.
