The CDP TRADITION RED is usually a blend of Black Grenache 90% & Syrah 10%. The average age of the wines is 45 years old. The soil consists of Silica and clay with rounded pebbles. Grapes come from 3 different location : Pierredon, Les Relagnes and Saint Paul. The picking is entirely manual and followed by systematic sorting in the vineyard. Then a traditional vinification with complete destemming. One part of the harvest is wine made in one wooden truncated vat. The grapes varieties are wine made separately with a long vatting of 4 to 5 weeks. The temperatures are controlled throughout the alcoholic fermentation. Pumping over 1 or 2 times per day along and 3 to 5 releases during the fermentation. Then the maturing takes place for 12 months in “demi-muids” oak barrels for Syrah to coat the tannins. The most concentrated and tannic Grenache is aged in “demi-muids” from 12 to 18 months, the remaining stays in stainless steel tanks to keep fruit aromas and elegance. A definitive blend is determined and made just before bottling. 10.000 bottles are produced.
